We are thrilled to announce this limited edition Brasil Ibairi from Daterra, just 100 bags available.
This incredible coffee comes from Brasil, more precisely from the Cerrado Mineiro region in the Minas Gerais state. In Finca Boa Vista, at 1150 mt above sea level, Ibairi coffee grows rich and flourishing.
The Ibairi varietal is a crossbreed between Red Bourbon and Mokka: the coffee bean looks very small and round and its mucilage is very sweet. The name Ibairi comes from Tupi, the language of native Brazilians, and means precisely “small and sweet fruit”.
Coffee cherries are hand-picked, natural processed and put into a special tank where the fermentation starts. These special tanks are equipped with a valve system that prevents any gas from entering the tank. As the cherries ferment, they release CO2 and, because carbon dioxide is denser than oxygen, it pushes the lighter gas out through the valve. After a few hours, the tank environment becomes completely anaerobic, allowing the perfect conditions for microorganisms to perform enzymatic reactions inside of the beans.
This anaerobic fermentation enlights great and exceptional flavours.
